I am deeply saddened to learn that Bill Jaeger has passed away. Mr. Jaeger was one of my instructors at Washburne Trade School. He piqued my interest in butchering and smoking during Phase Four, elements of the craft that I continued to refine over the decades since. Unfortunately, he underwent heart surgery in the midst of our class, so we didn't get the benefit of everything that he could offer. Nonetheless, the time that we had with him in class was extremely productive. I'll always be grateful for his willingness to provide counsel when I reached out to him on a number of occasions several years after graduating from the program. I tried to emulate him in this, and a number of other ways, during the 19 years I spent as a culinary instructor. My heartfelt condolences go out to Anita and his extended family. The Washburne community and culinary craft has lost a giant.
